📖What is it?

The Specialty Coffee Association (SCA) defines the ideal brewing ratio as 55g of coffee per 1 liter of water (approximately 1:18.2). The coffee-to-water ratio directly controls strength: 1:15 is strong and bold, 1:18 is the SCA 'Golden Cup' standard for balanced extraction, and 1:20 is light and delicate.

💡Example scenario

20g coffee, 1:17 ratio, pour over: 340 mL water = 1.4 cups. This is a single strong pour-over. Double the coffee (40g) for two full cups at the same ratio (680 mL).

🏆Pro tip

The ratio controls strength but not flavor quality — that is controlled by extraction. Ideal extraction yield (weight of dissolved solids / coffee weight) is 18-22%. If your coffee tastes sour, it is under-extracted (grind finer or use hotter water). If it is bitter, it is over-extracted (grind coarser or use cooler water). Water temperature should be 90-96°C (194-205°F).
